Tofu stir fry in a homemade cashew-butter sauce

Recently I posted a blog on the planetary health diet (see here: https://emmaatthelifestylepill.com/2019/01/20/planetary-health-diet/).
Whilst the advice is there, I know some of you might be thinking what this actually means in terms of food on your plate.
This is an easy to whip up dinner we made this weekend which I think represents the planetary health plate:
Ingredients (serves 2-3):
1 block of tofu – I used 396g Cauldron tofu
200g tenderstem brocolli
2 spring onions
250-300g beansprouts
200g sliced mushrooms (whichever is your favourite variety)
Handful of cashews
For the sauce:
2 tablespoons cashew butter
1 tablespoon tamari (or soy sauce)
1 tablespoon apple cider vinegar
Water
Method:
1.Press the tofu until firm
2.Cut the tofu into blocks and add too a frying pan with a little olive oil.
3.Add the spring onions, sliced
4.Cut up the mushrooms and broccoli and add these too, once the tofu is starting to cook through a little.
5.Add the beansprouts
6.Make the sauce by mixing all the ingredients together in a bowl, adding the water last bit by bit until a milk like consistency.
7.Pour the sauce over the rest of the ingredients in the frying pan and stir to combine.
8.Top with whole cashews.
Serve hot 👌
