Almond & Cherry Protein Loaf

🍒Almond & Cherry Protein Loaf🍒
This has been my snack at work over the past week 👍. Mixed it up and made a loaf as we were running a bit late last Sunday after a family walk in the #newforest and a pub lunch 😊. This was all mixed up and in the oven before Stu finished making our stir fry dinner, so a great one when short on hands-on time 👍.
INGREDIENTS :
🔹100g oats
🔹100g vanilla protein powder (I use @myproteinuk natural vanilla)
🔹160g Greek yoghurt
🔹1 teaspoon vanilla extract
🔹1 chia egg (1 tablespoon chia seeds & 3 tablespoons water).
🔹1 teaspoon baking powder
🔹50g dried cherries
🔹1 tablespoon almond butter
🔹3-4 tablespoons milk – I used cashew milk but any milk you have will do.
METHOD :
1. Preheat oven 180 degrees C (fan). 2. Make chia seed egg by mixing the chia seeds and water together, and let set for 5-10 mins.
3. Add all ingredients to a large mixing bowl, dry ingredients first, then wet, then stir together well. Make sure the chia egg is mixed in well and not in one big clump.
4. Grease a loaf tin.
5. Pour the ingredients into the loaf tin.
6. Bake for 25 mins.
7. Leave to cool in the tin.
8. Once cooked slice and store in an airtight container in a fridge.
So good a slice might just disappear! 😉
